only real things you will need to concern yourself with that are S70 specific would be the pistons, piston rings, and in the most extreme case the crankshaft. Alot of these V12's have over 200,000 miles on them and are still running strong. I just recently did valve stem seals and intake gaskets on a EURO Csi with 235,000 miles. The engine in this car still pulls very hard and it currently has over 250,000 miles. You will be replacing clutches though at this kind of mileage. DK Motors (throttlebodies) are the same as the M70, the MAFs however are slightly different and a tad bit more expensive.
Bottom line: don't be frightened these things were designed to last.
My personal preference is a moded (chips, exhaust) M70 since it is a low compression engine - it also will allow you to do a twin turbo set-up without changing out major internal components as you would with the higher compression mototr (S70, M73).
